I Love Fall

  Hey there! It's official, fall has arrived here in Elbert County Colorado! I love fall! I love the colors and the cold, crisp nights. I love blankets and baking and pumpkins! Yup! I love fall!

  Okay, now that my gush is over, I have been really busy cooking , baking, and crocheting. (I didn't mean for that to rhyme, must have been channeling Theodore Gisele again) I thought by now I would have returned to my Santa to finish him up but that didn't happen. Instead, I have crocheted another blanket and have nearly finished a great poncho. My daughters got to see the poncho this weekend and now they are each asking for one. I'm thinking maybe for Christmas but we'll see. I wish the colors in this baby girl balanket would show up better but after several tries, this was as good as it was going to get. My mom has a friend who is having a baby girl so this one goes to her. On my next post I will make sure to put up a picture of the poncho.

  Along with crocheting I have been in the kitchen a lot lately. It has been really chilly here so to the oven I have turned. I have been making casseroles, quick breads, and trying some great new recipes.  A co-worker of mine told me about a great blog site called: thepioneerwoman.com .On Ree's site you can click on her recipe tab and OMG! the recipes are amazing! She has a recipe for pumpkin creme pies that are truly one of the best "cookie" recipes I have EVER tasted. I made a batch and took them to a religion class last Tuesday night and ever single person in the class asked for the recipe. They are labor intensive but sooo worth the effort. Plus, they are made with pumpkin which I have a thing for. She also has a recipe for a Blackberry Cobbler #1 which is also truly divine. The picture below shows what they look like when you pipe them on the baking squares before they go into the oven. The picture at the top shows them baked and assembled.

  Life around here is starting to slow down finally. We have managed to fill the barn with hay for the horses so now I don't have to worry about when the snow flies. I'm not sure why but it seems like every fall hay for horses gets harder to find. Especially because we have it delivered since our truck is no where near big enough to haul in what we need for ten months.

  My horse Shadow has had a rough couple of weeks. He is getting pretty old and the dust from everything drying up has been tough on his eyes. The vet came out and said here are some eye drops and just keep him out of the wind. Really?? We live on the Plains in the middle of what I swear is a wind tunnel. So, needless to say, I give him the eye drops and tell him to stay inside of the barn. I know he runs out the minute I am headed back to the house. Oh well, A for effort. I love my old man. He is such a good, big dog:)
